Recipes We Love: Italian Veggie Soup

This plus Easy French Bread is one of Chris' top 10 meals, he says.  Originally from Taste of Home, I do believe.  Lots of ingredients, but it makes a TON and is actually fairly frugal (especially if you use half the meat).

1 lb ground beef, browned and drained
1 c diced onion
1 c sliced celery
1 c sliced carrots
2 cloves garlic, minced
1 can (16 oz) tomatoes
1 can (15 oz) tomato sauce
1 can (15 oz) kidney beans, undrained
2 c water
5 t beef bullion granules
1 T dried parsley flakes
1/2 t oregano
1/2 t sweet basil
1/4 t black pepper

Cover and simmer 20 minutes.

Add:
2 c shredded cabbage (I never have this so don't add it)
1 c green beans (fresh or frozen)
1/2 c small elbow macaroni

Simmer until tender.  Sprinkle with Parmesan.
